Summer time Crock Cooking…

I finally have a contribution for….(((drum roll)))

Make-Do Mondays!!

Make-Do Mondays!!

So the sad story goes like this…

Last weekend my wonderful husband cleaned our ancient wall oven for me. I’m 5′ tall and I cannot safely reach…and he is sweet! Well he heated it up…applied the oven cleaner, cleaned it and repeated! Yeah! I know, but I am too short! Anyway, he did a wonderful job.

Two days later I season a whole chicken, and oddly enough decided not to stuff it. God is good! Put the lovely meal in the roaster with its marbled blue lid and set the oven to preheat. Well I heard a little pop, but the indicator light was on and when I opened the door a waft of heat was coming off the heating element. Needless to say that the waft of heat was from the short out…20 minutes later, indicator light shining luminously and the oven was cold.

Now I have a beautifully clean, ancient (Olive green 1970’s Electric) wall oven that is decorating my kitchen! What to do?

That night I clevered the chicken in half and cooked it in the cast iron pans I have and love! All pans should be cast iron!

Tonight, however is Monday and I wanted to make a pot roast! Ahhhh, my mind recalls the Crock Pot that is stored away, out of my 5′ reach, atop the refridgerator. A ladder….or footstool???? No!  The amazing 6′ foot son….

James!

James!

James got me the crock pot, while I rubbed a beautiful pot roast with freshly minced garlic, kosher salt and coarsly ground pepper. I then dry seared the seasoned roast, in the cast iron skillet, making an awesome crust. Set it lovingly in the dry crock and then deglazed the skillet with a bit, about 4 tablespoons of stock, pouring the flavorful tidbits over the roast and cooked on high setting ( it was 1 pm) for about three hours.

(I made do with web photos too, if that counts! LOL…=))

Served with Knorr Cajun Rice and sliced carrots ~ we had a lovely roast dinner, without the use of an oven. And on a hot and humid summer NJ evening to boot!
Blessings! =)
